We sometimes might want a collection in our Portal Catalogue to scroll without “Load More” through the whole collection that’s greater than 12 videos. Is that (easily) doable?

At the moment, the feature you're inquiring about isn't available with the Portal Catalogue template, as it's designed that way.
However, there may be potential for customization. I suggest reaching out to your CSM, who can connect you with the Brightcove Global Services team to explore any available options.
